المكونات:
1 1/4 كوب طحين
ملح 1/4 ملعقة صغيرة
١ اصبع زبدة غير مملحة ١٠٠غ
٤ ملاعق كبيرة من الماء المثلج
الطريقة:
نضع الملح و الطحين في الخلاط .
نقطع الزبدة قطع صغيرة و نضيفها تدريجيا في الخلاط .
نضيف ٤ ملاعق تدريجيا من الماء المثلج
نجمع بلطف جزيئات العجين في الكرة. و نلفها في غلاف بلاستيكي، تبرد العجينه في الثلاجة لمدة 30 دقيقة على الأقل قبل الخبز.
تفرد العجينة و توضع في قالب الخبز و يوضع فيها ثقل ثم تخبز لمدة ١٠-٢٠ دقيقة الى ان تجف و تخبز، خاصة القاعدة Blind baking
الحشوة:
3/4 كوب سكر أبيض
3 ملاعق طعام من السكر البني اللزج
1/2 ملعقة صغيرة من الملح
1 كوب شراب الذرة Corn syrup
3/4 ملعقة صغيرة فانيليا
1/3 كوب الزبدة المذابة (المملحة) او تضاف ربع ملعقة صغيرة ملح لكل اصبع زبدة (١٠٠ غرام)
3 بيضات مضروبين
1 ونص كوب بيكان
الطريقة
نخلط السكر الابيض والسكر البني والملح وشراب الذرة والزبدة والبيض والفانيليا معا في وعاء.
نضع البيكان على العجينة
و نصب الخليط فوق البيكان
تغطى بالقصدير من فوق، ثم توضع في الفرن: 175 c لمدة 30
يزال القصدير و تواصل الخبز لمدة 20 دقيقة اخرى، مع الحرص على عدم حرق السطح أو البقان.
عند خروج الفطيرة من الفرن يجب ان تكون الحشوة متماسكة بعض الشيء و ليست شبه سائلة. إذا كانت تهز الكثير، ممكن خبزها ١٠ دقائق او ٢٠ دقيقة اخرى.
يجب ان تبرد تماما و “تصك” قليلا قبل التقديم (أحب رش سطح الفطيرة بالملح البحري قبل التقديم لتعزيز النكهة)
