Sweet Texas — big, round, pale-yellow bulbs.

Mild and sweet, with very little bite. Lovely raw, grilled or caramelised.

Made for our short winter days — the right onion for Kuwait.

When to pick: When the tops turn yellow and fall over, lift the bulbs and dry them in the shade for a week. Pull a few early as green onions if you like.

Planting steps in detail

You need: Potting Soil Mix and a shovel. A wide pot or trough 20 cm deep, or a sunny spot in the garden.

1. Pot: fill with Potting Soil Mix. Ground: dig, mix a few handfuls in.

2. Water the pot an hour before. Squeeze it and slide the soil ball out whole.

3. Gently pull the plants apart — a little root damage is fine, onions recover fast. Never pull hard on one stem.

4. Plant each one 10 cm apart, shallow: the white base just under the soil, not deeper. Press, water until it drains.

Late afternoon, never at noon. No feeding for the first 2 weeks.
